    Easy Baked Greek Chicken

    If you are looking for a really easy one-pan chicken dinner that is full of flavor, this baked Greek chicken is for you. The baked chicken breasts are coated with tons of delicious Greek seasoning and baked in the oven with peppers and onions until golden perfection. This Greek chicken tray bake is then topped with fresh Kalamata olives and feta to complete the meal. So easy and so delicious!

    When I am really short on time and still want a delicious meal to make for my family, I turn to this baked Greek chicken recipe. The spices and flavors are so amazing and because it is a Greek chicken tray bake and cooked in just one pan, cleanup is a breeze.

    The only other cooking I do when making this easy one-pan chicken is making basmati rice or homemade flat bread to go along with it. This baked Greek chicken is a real time saver on those days when you are short on time.

    Ingredients

    The ingredients for this baked Greek chicken are so simple. You can easily find all of these items at your local grocery store.

    • Chicken breasts. Without the skin.
    • Red bell peppers.
    • Onion. Spanish or red onion work great.
    • Feta. I prefer to buy feta cheese in a block and crumble it myself. It has so much more flavor than the pre-crumbled feta.
    • Kalamata olives. You can also use mixed Mediterranean olives.
    • Olive oil.
    • Garlic.
    • Kosher salt
    • Greek spices (oregano, thyme, lemon, onion powder, red pepper flakes)

    How to Make Baked Greek Chicken

    Although this baked Greek chicken is so easy to make, Here is what it looks like to assemble everything.

    Add the chicken, veggies, and seasonings to a large pan.

    Once you add the chicken, olive oil, seasonings, and veggies to a sheet pan (or large baking pan), bake the chicken at 375 degrees for about 25-30 minutes or until the chicken is fully cooked through.

    Substitutions

    This Greek baked chicken recipe is very forgiving in terms of what ingredients to use. I have chosen some of my favorite Greek veggies (peppers and onions) but you can adjust this to your own taste.

    Here are some ideas:

    • Greek cucumber salad - is great to make instead of adding veggies to the pan with the chicken. Just make this to serve on the side of the Greek chicken.
    • Bone in chicken - If you have bone-in chicken breasts, go ahead and use those. You will just need to add a little more cooking time to the meal.
    • Chicken thighs. This recipe makes really great baked Greek chicken thighs. Just substitute the chicken thighs for the chicken breasts in the recipe. You may need to add a little more cooking time as well.

    Equipment

    Because this is a Greek chicken tray bake, everything is baked on a sheet pan. You can also use a glass baking pan, cast iron skillet, or any other baking dish you have on hand.

    Storage

    This baked chicken recipe stores really well for leftovers. If you do have any leftovers, go ahead and place the chicken and veggies into a container with lid and place them in the fridge. Make sure it is cooled first.

    This Greek chicken will last for up to 3 days stored in the fridge.

    Can I substitute chicken thighs for Greek chicken breasts?

    Yes. If you prefer to make Greek chicken thighs, just follow the recipe the same and add about 5 minutes of cooking time or until the chicken thighs are cooked all the way through.

    • 1 sheet pan or large baking dish

    Ingredients

    • 4 boneless skinless chicken breasts
    • 1 Red bell pepper sliced thin
    • ½ Large Yellow onion sliced thin
    • 1 Lemon cut into wedges
    • ½ cup Crumbled feta
    • ½ cup Kalamata olives pits removed
    • 3 tablespoon Olive oil
    • 2 cloves garlic minced

    Greek Seasoning

    • 1 tablespoon Dried oregano
    • 1 teaspoon Onion Powder
    • 1 teaspoon Kosher salt
    • â…› teaspoon Red pepper flakes
    • â…› teaspoon Dried thyme

    Instructions

    • Pre-heat the oven to 375 degrees.
    • Combine all the Greek spices in a small bowl and mix well. Set aside.
      1 tablespoon Dried oregano, 1 teaspoon Onion Powder, 1 teaspoon Kosher salt, â…› teaspoon Red pepper flakes, â…› teaspoon Dried thyme
    • Line a large sheet pan with aluminum foil for easy cleanup.
    • Place chicken breast on sheet pan spaced apart.
      4 boneless skinless chicken breasts
    • Now add peppers, olives and onions to sheet pan between the chicken breast.
      1 Red bell pepper, ½ Large Yellow onion, ½ cup Kalamata olives
    • Drizzle olive oil over the chicken and veggies.
      3 tablespoon Olive oil
    • Now sprinkle the Greek seasoning over the chicken and veggies making sure to coat all of them.
    • Sprinkle garlic over the chicken.
      2 cloves garlic
    • Place in the pre-heated oven on the top rack and bake for 25-30 minutes or until the chicken is fully cooked through and juices run clear.
    • Remove the chicken from the oven and squeeze fresh lemon juice over the chicken and veggies.
      1 Lemon
    • Sprinkle on the feta and olives.
      ½ cup Crumbled feta
    • Serve immediately as is or with your favorite side.
