Ingredients needed
- Strawberry tops: With the green leafy part removed.
- Granulated Sugar
- Water
Three simple ingredients are all you need to make this. With just ten minutes of your time, you can turn your strawberry tops (which would have ended up in the trash) into a delicious strawberry syrup.
How to make

The steps to making this strawberry simple syrup are really easy. You just add all of your ingredients into a saucepan, bring to a boil, and let simmer for 10 minutes.
Once it is done simmering, you just leave the berries in the simple syrup and then let it cool. Once it is cooled, you just strain it, and done!
How much strawberry flavor is in this syrup?
Because you are using just the tops of the strawberries, the strawberry flavor will not be as concentrated as if you were using the whole strawberries.
This syrup will have a lighter strawberry flavor. You can increase the intensity of the strawberry flavor by adding more strawberry tops to the recipe. It tastes amazing both ways.
Storing
I have found that this simple syrup stores really well in the fridge for about one week if it is covered. I have not had success storing it longer than this because the fruit that is infused in the syrup can go bad.
So aim for about one week in the fridge!

Strawberry Tops Simple Syrup
Equipment
- Fine mesh strainer
Ingredients
- 1 cup water
- 1 cup sugar
- 1 pint fresh strawberry tops with the greens removed green tops removed
Instructions
- In a medium sauce pan add your strawberry tops, sugar and water and bring to a boil1 cup water, 1 pint fresh strawberry tops with the greens removed, 1 cup sugar
- Once it has come to a boil, reduce the heat to medium and simmer for 5 minutes, stirring frequently.
- After 5 minutes, remove from the heat and place a lid over the the pot and let it come to room temperature.
- Once cooled, place a fine mesh strainer over a large bowl and pour the mixture over that.
- Transfer your syrup to a container and cover with plastic wrap and place in the refrigerator for 4 hours to chill.
- After it has chilled, you can use it in your favorite drink, dessert, or cocktail.
