Roasted Green Beans with Rojo Chimichurri

Roasted Green Beans with Rojo Chimichurri

Roasted green beans with rojo chimichurri is such an amazing way to make green beans that are usually (to me) quite bland!  This dish idea came from my laziness of not wanting to create another spice blend for my green beans on a day that I already made a chimichurri sauce for some meat I was grilling (steak tips with rojo chimichurri).  Well, these green beans came out amazing and I was so glad that I was lazy that day! These are super easy and well worth making because of all their flavor!

Roasted Green Beans with rojo chimichurri

  • 1 bag of green beans cleaned
  • 3 tbsp of rojo chimichurri sauce see link above
  • 1/8 tsp of salt
  • 1 tbsp of olive oil

  • Pre-heat your oven to 375 degrees. In a large roasting pan add your green beans, olive oil and the 3 tbsp of your chimichurri sauce and mix well to coat all of the green beans. Now sprinkle your salt over top. Roast in the oven for 20-25 minutes until the green beans begin to brown on the edges and are cooked all the way through.
