These baked green beans are the perfect way to make crisp green beans in the oven and adding a delicious Spanish red chimichurri sauce adds so much flavor. This sauce is amazing!
Roasting this Spanish sauce along with the green beans completely changes how I feel about green beans. It has me loving green beans for the first time in a long time.
If you are not familiar with this type of Spanish sauce, it is a close cousin to the green chimichurri sauce that everyone loves. It has some tomato added to the sauce and a few other little additions and it goes so well with roasted green beans.
It is really easy to make too.

The Ingredients
Aside from the Spanish sauce portion of this recipe, you probably already have everything in your fridge. Here is what you will need (full recipe below)
- Green Beans
Spanish Chimichurri Sauce
- Tomato paste
- apple cider vinegar
- fresh Italian parsley
- garlic
- lemon
- olive oil
- red pepper flakes
- paprika
- salt and pepper
The Spanish chimichurri sauce is a really delicious sauce that goes on to just about anything from meats to vegetables. You can see from the ingredients list that it is going to be loaded with tons of flavor.

How to make
- Make your Spanish chimichurri sauce
- Rinse and dry your green beans
- Toss the green beans and some of your sauce in a large bowl to coat them.
- Spread your green beans on a sheet pan
- Roast until they are fully cooked.
- Once they are done, toss in more sauce to coat the cooked green beans.
Recipe Tips

Storing
These green beans make great leftovers and store well. Allow them to cool fully then place the green beans in an air-tight container in the fridge for up to one week.
You can reheat them in the microwave with a covered paper towel on medium heat for 1-2 minutes or until warmed through.

Spanish Green Beans
Ingredients
- 1 12 oz bag of green beans cleaned and dried
- 1 tablespoon of olive oil
Spanish Sauce
- 1 cup blanched parsley throw the parsley in boiling water for 30 seconds then rinse under cold water.
- ⅛ cup apple cider vinegar
- 4 cloves garlic minced
- 3 tablespoon tomato paste
- 2 tablespoon water
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ⅛ teaspoon ground cumin
- ⅛ teaspoon sweet paprika
- pinch of red pepper flakes
Instructions
- Pre-heat your oven to 375 degrees.
- Make the Spanish chimichurri sauce.1 cup blanched parsley, ⅛ cup apple cider vinegar, 4 cloves garlic, 3 tablespoon tomato paste, 2 tablespoon water, 1 teaspoon kosher salt, ½ teaspoon black pepper, ⅛ teaspoon ground cumin, ⅛ teaspoon sweet paprika, pinch of red pepper flakes
- In a large roasting pan add your green beans, olive oil and ½ of your red chimichurri sauce and mix well to coat all of the green beans.1 12 oz bag of green beans, 1 tablespoon of olive oil
- Roast in the oven for 20-25 minutes until the green beans begin to brown on the edges and are cooked all the way through.
- When the green beans are done cooking, add a little more sauce to the green beans to coat them.
- Serve Immediately with the remaining sauce on the side.
