Leftover prime rib (and leftover beef roast) makes a creamy, rich meal during the holidays. This beef Stroganoff from leftovers is easy to make, delicious, and ready in 30 minutes. It is the perfect easy stroganoff meal.

Beef stroganoff is said to originate from the Stroganov family in Russia. It was adapted by French chefs to the current version that we know so well.
In our house, beef stroganoff is made one way and one way only, with leftover prime rib. We love cooking up a boneless prime rib during the holidays and after throwing down a hefty amount of money on this delicious cut of beef, you better believe we are making sure to get a second meal from it. We even make this meal with leftover steak.
This leftover prime rib stroganoff is that meal and it is delicious. My family loves eating leftovers when I make this and I think you will too.
Ingredients
Aside from the leftover prime rib, there are not many ingredients that you will need to make this recipe.

- Leftover Prime Rib: Cut into slices. There are more cuts of beef you can use which I talk about at the bottom of the post!
- Mushrooms: I like to use a mix of button mushrooms and baby bella mushrooms.
- Onion
- Sour cream: Sour cream is the base of the creamy stroganoff sauce.
- Noodles: I like using wide noodles for this dish.
- Paprika: This is sweet paprika.
- Beef stock
- Unsalted Butter
- Kosher salt and pepper
How To Make Beef Stroganoff from Leftovers
What I love about this beef stroganoff is how easy it is to make. Here is what it looks like (full recipe below):


- Prepare leftover beef: Slice up the leftover prime rib (or beef roast) into thin strips.
- Prep ingredients: Slice up mushrooms and grate the onion.


- Heat prime rib: Cook the prime rib in the saute pan until it is heated then remove from the pan.
- Start the sauce: Now you want to add the butter and grated onion to the same pan and cook it for a couple minutes. Then add mushrooms and cook those down for another couple of minutes.


- Add beef stock: Add stock to the mushrooms.
- Add sour cream: Now add the sour cream and the beef to the pan and mix well. Now season the sauce with paprika, salt, and pepper.
- Cook noodles: Cook the noodles for the stroganoff until al dente.
- Toss: Toss the cooked egg noodles with the creamy stroganoff sauce and serve.

- Make Philly Cheesesteaks. Just use your prime rib in place of steak to make this delicious sandwich.
- Make a French dip. All you have to do is add some warmed prime rib to some buns and use that prime rib au jus that came from making the prime rib and you have a delicious sandwich.

This recipe works really well with prime rib, beef chuck roast, roast beef or any other beef roast that you have leftovers from. Just follow the recipe the same way with all these cuts of beef.

Easy Prime Rib Stroganoff (From Leftovers)
Ingredients
- 1 lb Leftover Prime Rib
- 1 lb Egg noodles
- 8 ounces Baby bella mushrooms sliced
- 8 ounces Button mushrooms sliced
- 1 cup Sour cream
- ½ White onion grated
- ½ cup Beef stock
- 2 tablespoon Unsalted butter divided
- 1 teaspoon Kosher salt plus more to taste
- ½ teaspoon sweet paprika
- pepper to taste
Instructions
- Bring a large pot of water to a boil
- In a large saute pan over medium heat, add one tablespoon of butter and prime rib.1 lb Leftover Prime Rib, 2 tablespoon Unsalted butter
- Cook prime rib until just heated through, about 2 minutes. Then set aside onto a plate.
- Add onion and remaining butter and cook for one minute.½ White onion
- Add mushrooms and cook for a few minutes until the mushrooms begin to soften.8 ounces Baby bella mushrooms, 8 ounces Button mushrooms
- Add beef stock and mix well.½ cup Beef stock
- Add sour cream, paprika, salt, pepper and prime rib to the pan and mix well.1 cup Sour cream, 1 teaspoon Kosher salt, ½ teaspoon sweet paprika, pepper
- Cook for a few minutes to let the flavors come together.
- Taste for any additional salt.
- Reduce heat to low and cover.
- Cook egg noodles until al dente making sure to reserve a little pasta water before draining.1 lb Egg noodles
- Add egg noodles to the stroganoff sauce and toss well.
- If the sauce is too dry, add pasta water a little at a time until it is the desired consistency.
- Serve immediately.
