Why You Will Love This Stovetop Oatmeal
I make lots of oatmeal on the stovetop (going on 5 years now almost every morning!) What I have learned is there is more to cooking great oatmeal this way beyond what package instructions tell you.
I like the oats to have a little chew and not be mushy and the method in this recipe delivers creamy oats with an amazing slight chew. The best of both worlds!
This spiced version of oatmeal is my creation for my daughter who is away at college and needed a good easy stovetop oatmeal recipe with her favorite Fall spices in it. She can make the whole batch and warm individual servings each morning for herself, the way I do.
I will show you how to make this easy oatmeal, and the best way to store and warm it. Once you try this, you will ditch those package instructions and make this recipe instead.
Ingredients And Substitutions

- Old fashioned Oats: Any brand will do!
- Whole Milk: You can lighten this up with 2% or low fat milk. You could also use dairy free milk.
- Sea salt: Just a touch! You can also use kosher salt.
- Granulated sugar (white sugar)
- Vanilla extract
Spice Mix
- Cinnamon: I like to use ground cinnamon but you could use 1 whole cinnamon stick as well.
- Fresh Nutmeg: I find it tastes better.
- Ground Allspice
- Ground Cloves
- Cardamom: I like using cardamom pods and I give a light smash to it then add it to the oats. You can use cardamom powder or omit it if you don't have it.
How To Make

- Add oats and milk to a medium saucepan: Measure out your oats and milk and pour them into a medium saucepan that has a lid.
- Add spices: Now add the spices for the oatmeal (salt, sugar, cardamom, allspice, cinnamon, nutmeg, and cloves.
- Bring to a boil: You want to bring it all to a boil mixing together well and once it comes to a boil, reduce the heat to medium low and let simmer. Make sure to stir often.
- Cover: After simmering and stirring for 5 minutes, remove the oatmeal from the heat and cover the pot. Let the oats rest for 5 minutes covered.
- Stir and Enjoy! After 5 minutes, remove the lid, and stir the oatmeal. It should be a nice creamy consistency.
Variations
- Make it lighter: You can use a reduced fat milk or milk alternative to lighten up the recipe. You can omit the sugar as well or use maple syrup or honey as your sweetener.
- Add in nuts: I love adding in toasted pecans or walnuts once the oats are done cooking.
- Add raisins! I love doing this when I have them on hand. Raisins, sultanas or any dried fruit chopped small make a great addition and give an extra boost of nutrients for the morning.
Storage And Reheating
I like to make the whole batch of this oatmeal for myself to have for a couple days so I have a quick breakfast ready for me in the morning. To do this I allow the oatmeal to cool and place it in a container with a lid in the fridge.
When I am ready to reheat the oatmeal, I scoop some into a microwave-safe bowl and add a little milk to the oatmeal (since it will be very thick after cooling.) Microwave it on medium-high heat for about 1-2 minutes then give the oatmeal a good stir. You can add a little more milk to the oatmeal if it is needed.
Recipe Tips
- If your oats are too creamy: If you prefer thicker, firmer oats, let the oats rest in the pot with the lid on for 10 minutes instead of 5 minutes.
- Gently simmer: You want the oats to gently simmer in the milk and not foam too much. Since all stovetops vary, you may need to reduce the heat to low to achieve this during the simmering time.
- Stir often: Because this spiced oatmeal recipe is made with milk, the milk has a tendency to form a skin on top when cooking. Make sure to keep stirring during the simmering time to prevent this.

- Bring it all to a boil mixing together well. Once it comes to a boil, reduce the heat to medium low and simmer for 5 minutes. Make sure to stir often.
- After simmering and stirring for 5 minutes, remove the oatmeal from the heat and cover the pot with a lid. Let the oats rest for 5 minutes covered.
- After 5 minutes, remove the lid, and stir the oatmeal. It should be a nice creamy consistency.
