These soft and chewy apple butter cookies are the perfect fall treat, and the best part is you don't have to wait for the dough to chill before baking them!
¼cupApple butterstirred well and try to use an apple butter with Fall spices in it (cinnamon, clove, allspice). See note below!
⅛cupplus one teaspoon brown sugarpacked
1teaspoonpure vanilla extractoptional
¾teaspoonCream of tarter
½teaspoonBaking soda
¼teaspoonkosher saltIf using regular table salt, make sure to half the amount.
Cinnamon Sugar Coating
½cupGranulated sugar
1teaspoonGround cinnamon
Instructions
Preheat oven to 350°
Cookies
In a large bowl, whisk together flour, baking soda, cream of tarter and salt then set aside.
1 ¾ cups plus 2 tablespoon of All-purpose flour, ¾ teaspoon Cream of tarter, ¼ teaspoon kosher salt, ½ teaspoon Baking soda
In a separate large bowl with a hand mixer or stand mixer, add butter and both sugars and mix on medium speed for 1 minute.
½ cup granulated sugar, ½ cup unsalted butter, ⅛ cup plus one teaspoon brown sugar
Now add vanilla, apple butter and the egg and mix until combined.
1 Large egg, 1 teaspoon pure vanilla extract, ¼ cup Apple butter
Add the dry ingredients to the wet ingredients and mix just until it comes together.
Add parchment paper to a baking sheet. If you do not have this, just omit this step.
Using a medium cookie scoop or a ⅛ measuring cup, scoop out the dough then add it to a small bowl of cinnamon and sugar and coat all sides. Place on a lined baking sheet making sure they are about 1 inch apart.
½ cup Granulated sugar, 1 teaspoon Ground cinnamon
Do this with all of the cookie dough until it is all used up.
Bake cookies for 14-15 minutes, or until golden brown all over.
Remove from oven and allow to cool completely on the baking sheet. They will firm up while cooling.
Notes
If your apple butter is made from just slow cooked apples and very little spice, add these seasonings to the apple butter in the recipe:-½ teaspoon ground cinnamon-⅛ teaspoon ground allspice
