In a small bowl, combine your yeast with ¼ cup of warm water.
¼ cup warm water, 1 package of active dry yeast
Let the yeast and water mixture sit for about 10 minutes until the yeast starts to get foamy.
After 10 minutes, mix all of the ingredients except the baking powder (you will add this right before cooking) in a large bowl.
2 cups All purpose flour, 1 ½ cup Whole Milk, 2 large eggs, 3 tablespoon melted unsalted butter, 2 tablespoon sugar, 1 tablespoon vanilla extract, 1 teaspoon kosher salt
Cover your batter with plastic wrap and let sit for at least one hour in a warm place in your kitchen. You can also make this batter the night before and let it sit in the refrigerator overnight.
Making the waffles
After an hour has passed, pre-heat your waffle maker according to your manufacturers instructions.
Check your batter and you should see some bubbling action that occurred with your batter.
At this point, add your ¼ teaspoon of baking powder into your batter and mix well.
¼ teaspoon baking powder
When your waffle iron is pre-heated, scoop ⅓ cup of your batter into each of your waffle spaces.
Wait 10 seconds after adding your batter and then close the waffle maker to cook the waffles.
Cook your waffles according to your waffle maker instructions. For my waffle maker I like to cook my waffles on a medium high heat to have a crisp outside.
Once your waffles are done, remove them from the waffle maker and place them on a cooling rack for 1 minute to let the remaining steam to escape.
Continue to do this until all of your batter is used up.
Serve immediately after that with your favorite toppings.
