Preparing your ingredients
Pre-heat your oven to 450 degrees
Cut up your butter into small pieces and place in the fridge.
½ cup Unsalted Butter
In a small bowl, mix yogurt, milk and one egg. Place in the fridge.
½ cup Greek yogurt, 3 tablespoon milk, 2 eggs
In a large bowl, measure out your flour, baking soda, baking powder, salt and sugar. Mix well.
2 ½ cups unbleached all purpose flour, 1 tablespoon sugar, 1 tablespoon Baking Powder, ½ teaspoon Baking Soda, 1 teaspoon kosher salt
Now grab all of the items you will need to make the biscuits: rolling pin, biscuit cutters, extra flour for counter and a large sheet pan.
Making the biscuits
Grab your butter out of the fridge and add it to the bowl of dry ingredients.
Cut butter into flour with a pastry cutter until it looks almost like coarse sand. You can also add it to a food processor and pulse on high 5 times.
With your finger tips (not your whole hand) start rubbing grabbing large amounts of the butter and flour mixture and rub it between your fingers. You are looking for any large clumps of butter that did not get incorporated into the flour.
Do this until your do not find any more large clumps of butter.
Now add wet ingredients from the fridge to your dry ingredients.
Mix well until it comes together and there is no more dry flour.If the dough does not hold together, add 1 tablespoon of milk and mix. Do this until you do not see any more dry flour in the bowl.
Now take your dough (which will be clumpy at the point) and place it on a floured surface.
With your fingers, bring the dough together to form a ball.
Sprinkle a little flour over the top of your dough.
Gently roll the dough to about ¾ inches thick.
Take your biscuit cutter and dip it into a little flour and start cutting out your biscuits. Dip in flour with each cut.
Once you run out of areas to cut your biscuits, gently fold your remaining dough in half and gently press together. Re-roll into a ¾ inch disc and finish cutting out more biscuits.
Place your biscuits on to a large sheet pan giving them about ½ inch of space.
Make an egg wash by adding one egg and 2 tablespoons of milk to a bowl and mixing well.
Brush your biscuits with the egg wash.
Sprinkle with a little kosher salt on top (optional)
Bake for 15 minutes or until the biscuits are nicely risen and just starting to brown on the bottom.
Remove from the oven and let rest for a few minutes.
Serve immediately.

Variations :
Sweet biscuits for shortcakes. Now you could totally use this recipe as is for a delicious strawberry shortcake but if you want a little sweeter biscuit just add 2 tablespoons of sugar to the recipe.
