In a large saute pan over medium heat, add the olive oil.
1 tablespoon olive oil
Now add the onion and cook for about 2 minutes until softened.
¼ cup White onion
Add green beans to the pan and cook for 1 minute, stirring often.
1 lb Green beans
Now add the harissa and garlic and cook for 1 minute.
3 tablespoon Harissa, 3 cloves garlic
Add vinegar and allow the vinegar to reduce for 1 minute.
2 tablespoon Red wine vinegar
Add quartered tomatoes and salt and stir well.
3 medium tomatoes, 1 teaspoon kosher salt
Place lid on the pan and simmer for about 5 minutes. Check to make sure the tomatoes have released enough juices in the pan for the green beans to cook in. If the variety of tomatoes you are using is a little drier, add ¼ cup of water.
After 5 minutes, check that the green beans are tender. If they you prefer them cooked down more just add a few minutes of cooking time with the lid on.
Taste for any additional salt and if the harissa you used tastes bitter, add a pinch of sugar and mix well.
