Zucchini is such a delicious and versatile vegetable that is readily available at the grocery stores and farmers markets in the summer. When zucchini is in abundance in the summer having a arsenal of recipes is important in making sure you don’t get sick of the same recipes.
Another reason for having an arsenal of zucchini recipes for this season is it helps us buy what is freshest and abundant during summer. We get used to buying produce any time of year thanks to global trade and we forget the importance of seasonal first!
Why buying in season is important:
- Buying fruits and vegetables in season means you are buying them when they are at their freshest. Fresh means better flavor!
- When you purchase produce that is in season, you will actually be saving money since the produce is in abundance and often will not have to travel as far to get to you, the consumer.
- If at all possible, buying seasonally and locally helps out your local area and small businesses. You get the benefit of fresh seasonal produce while supporting your community, a win win!
I have put together this list of my three favorite ways to use zucchini in the summer and they are all really delicious. My family looks forward to these recipes each year and so do I because they are easy and delicious.

Zucchini pancakes are truly a classic and these will not disappoint even with the pickiest eater. This recipe will use up a lot of that zucchini you have and it tastes absolutely amazing!
Italian Baked Zucchini
Italian Baked Zucchini is one of my favorite dishes to make, summer or not. This is really simple dish made with just zucchini, cheese and your favorite red sauce.
It is not a lasagna but a simple layer of zucchini covered with the cheese and sauce making the distribution of ingredients absolutely perfect! This is great served with a side of pasta or good crusty bread to soak up the sauce.
Zucchini Pudding
Zucchini pudding is a really tasty way to eat your veggies and this dish comes from Mexico in its origins. The zucchini is mixed with eggs, crushed saltines and cheese to make this delicious pudding.
I love this as a side dish or an appetizer served with some bread to dip in it. This is definitely a must try!
