    Korean Sesame Noodles with Roasted Broccolini

    Korean sesame noodles is a big on flavor dish that will definitely liven up any dinner rotation. I've always loved all sesame noodles recipes because it is quick, easy and very tasty.  This recipe is a twist on that and definitely in keeping with a traditional spicy noodles dish.

    The special Korean ingredient that makes this taste amazing, Gochujang:

    For this recipe, I decided to add a special ingredient to the mix called gochujang which is a Korean chili paste.  Now I am not one for buying special items for a dish and usually prefer to make my own blends but this paste is extremely versatile. It is great on veggies and meats and it is made with such unusual ingredients that I just wouldn't have them on hand. 

    It is really worth the purchase and if your grocery store's Asian section doesn't have it, you can buy it online and plan the meal around that!

    The other ingredients you will need to make these spicy Korean sesame noodles are:

    • thin spaghetti
    • garlic
    • soy sauce
    • vegetable oil
    • green onion
    • rice wine vinegar
    • sesame oil
    • broccolini

    Tips for this recipe:

    While this gochujang recipe with pasta calls for broccolini, you can easily substitute broccoli florets instead. I am just a huge fan of broccolini because I can basically use all of it, including the stems.

    This means I do not have to fuss with cutting off florets and discarding the broccoli stems. It is a totally up to you and what you have available!

    This dish is great as a meal prep item because it stores well as leftovers and reheats beautifully. It is also a favorite around here because it is a quick weeknight meal. It is a great way to change up your cooking routine and try a new spice blend. Trust me and give this a try because it is so amazing!

    Korean Sesame Noodles with Roasted Broccolini

    Ingredients

    • 12 ounces ​1 box of thin spaghetti, Cooked And Drained

    The Sauce for your pasta

    • ¼ cup Soy Sauce
    • 4 cloves Garlic Minced
    • 2 tablespoon Rice Vinegar
    • 3 tablespoon Pure Sesame Oil
    • 2 tablespoon of gochujang chili paste
    • 4 tablespoon Canola Oil
    • 4 whole Green Onions sliced thin as garnish optional
    • hot red peppers sliced as garnish optional

    Broccolini Rub

    • 2 heads of Broccolini cleaned and about 2 inches of the ends removed if you can't find this then 1 head of broccoli will be fine
    • a pinch of salt
    • 1 tablespoon of olive oil
    • 1 tablespoon of gochujang chili paste

    Instructions

    • Bring a large pot of water to a boil.
    • Pre-heat your oven to 375 degrees. In a medium bowl, add all of the ingredients for the broccolini rub (gochujang, olive oil, salt) and mix well.
    • Place your broccolini in the bowl and toss it around in the sauce making sure to coat it all. Now place your broccolini on a baking sheet and bake for about 10-15 minutes until it is cooked and begins to caramelize.
    • Next, in a large bowl, add all of your ingredients for the sauce that is going to go over your pasta, except for the green onions. Mix well.
    • When your pot of water comes to a boil, salt it and add your pasta and cook according to the manufacturers instructions for al dente, usually 4-5 minutes.
    • When ready, reserve 1 cup of your pasta water and drain your pasta. Add it to your bowl with the sauce and toss well. If it looks dry, add some pasta water and toss again.
    • Remove the broccolini from the oven. Scoop out your pasta into individual bowls and place the broccolini on top of the pasta.
    • With a spoon, scoop up remaining sauce from your large bowl and drizzle that over your broccolini and pasta. If using green onions or hot peppers for a garnish add them. Enjoy!
