Baked brie en croute with jam is a delicious and easy recipe that is made up of store-bought puff pastry, jam, and a wheel of brie cheese. The brie is topped with jam then wrapped in puff pastry and baked to golden perfection. This brie in puff pastry is a favorite holiday and entertaining appetizer and everyone always loves it.
Brie en Croute
Brie en croute (pronounced bree-on-kroot) is a French recipe that involves taking brie and wrapping it in puff pastry before being baked in the oven. The term en croute translates to "baked in pastry crust".
This brie en croute with jam is just that, a delicious wheel of baked brie with jam all wrapped in puff pastry crust and then baked until golden brown. This decadent baked brie is a little savory from the puff pastry and cheese and a little sweet from the jam.
You can use any jam for this recipe. I used a delicious homemade nectarine jam when I made this recipe but any jam will work beautifully.
You can use raspberry jam, peach jam or whatever jam you have on hand. You can also use homemade caramelized apples, and blackberry puree as a topping in place of jam.

Ingredients You Will Need
- One sheet of puff pastry. This is what your brie is wrapped in before baking.
- Jam. Any jam will do. You can use nectarine jam like I did here. Raspberry jam, fig jam, and peach jam work great too.
- Brie cheese. Look for a wheel of brie cheese that is larger in size. Some wheels of brie can be small.
- Egg wash. This is one egg that is beaten and then brushed over the puff pastry before baking in the oven. The egg wash gives the brie a beautiful golden crust.
How To Make Baked Brie en Croute With Jam
Roll: To make this brie and puff pastry, the first thing you want to do is roll out one puff pastry sheet on a lightly floured surface until it is about the size of an 11-inch square. Just a little shy of 12 inches or a ruler.
Add brie and jam: Once your puff pastry is rolled out, add your brie cheese and a heaping ⅓ cup of your jam on top of the brie.
Wrap: When you wrap the puff pastry (pleat the puff pastry) over the brie and jam, you do not have to worry about it being perfect. To pleat the puff pastry you are just wrapping the puff pastry in sections over the cheese.
Add egg wash: The egg wash that you add before baking will help give the brie en croute that beautiful golden color.
The beauty of working with puff pastry is it all looks beautiful after baking.
Tip:
I give a little pinch to the puff pastry that I folded to make sure the pastry is sealed. If you have had problems with your puff pastry opening up during baking, this will fix that!
When the brie en croute is done baking, I like to brush a little of the jam onto the outside of the puff pastry while it is still hot. It adds a little extra flavor to the puff pastry and it tastes delicious.
It will not add too much sweetness. This step is totally optional but it is good!
Storing
If you looking to entertain with this baked brie appetizer, the good news is this can be made ahead of time. Just assemble the brie and jam inside the puff pastry and fold it together. Cover the pastry and refrigerate for up to 24 hours ahead of time. When you are ready to bake the brie, remove it from the refrigerator and brush the egg wash on and bake.

You can easily freeze brie en croute. Just assemble the brie and jam inside the puff pastry and fold it together. Wrap in plastic wrap then place it in a freezer-proof container and freeze for up to 2 months. To thaw, remove from the freezer and place in the refrigerator overnight to thaw.
You do not need to take the rind off of the brie before baking. If you are not a fan of the brie rind, you will be happy to know that after baking, it just slides right off!
After baking brie en croute, you should let it rest for about 5 minutes to allow the cheese to firm up a bit. This will help prevent molten lava cheese from pouring out of the puff pastry when you cut it. If you let it rest for 5 minutes, you will still have that delicious gooey cheese with jam but it will not be too runny.

Baked Brie en Croute with Jam
Ingredients
- 1 Wheel of brie cheese about 12 ounces
- ⅓ cup Jam nectarine, peach, fig or raspberry all work great.
- 1 sheet of puff pastry
- 1 egg lightly beaten
- flour for dusting work surface
Instructions
- Pre-heat your oven to 400 degrees.
- Place parchment paper on to a sheet pan.
- Lightly flour your work surface.
- Take 1 puff pastry sheet and roll it to about 11 inches square or about ¼ inches thick. It does not need to be perfect.1 sheet of puff pastry
- Now place the brie cheese in the center.1 Wheel of brie cheese
- Add jam to the top of the cheese.⅓ cup Jam
- Fold the corners of the puff pastry over the brie and gently give it a little pinch to ensure the puff pastry stays in place when baking.
- Once the puff pastry is all wrapped, brush the entire puff pastry with the egg wash. Make sure to get all sides.1 egg
- Bake for 30-40 minutes or until golden brown.
- When done, remove the baked pastry from the oven and with a pastry brush, brush a little more jam over the golden puff pastry.
- Let cool for 5 minutes.
- Serve with hearty brad, crackers, crostini or fresh fruit slices.

I wrapped the brie with prosciutto and topped it with 4 different sections of different preserves and jellies, then topped that with diced shallots before I wrapped it up in the puff pastry and baked it. Delicious!
